Potted Garden Cakes
These adorable “terracotta” potted cupcakes are perfect for a garden party or an Easter dessert!
Ingredients
Cakes
- 1 package (15.25–16.5 oz / 510 g) yellow cake mix (plus ingredients listed on the package)
- 24 ice cream cake cones
- 1 package (16.6 oz / 450 g) chocolate cream sandwich cookies
- 1 can (16 oz / 450 g) chocolate frosting
Carrot Garnish
- 24 orange gum drops
- 6 green candy ropes
“Terracotta” Cones
- 2 packages (12 oz / 350 g) orange candy melts
Directions
Make the Cakes
- Preheat your oven to 350°F (176°C).
- Prepare the yellow cake mix according to the package directions.
- Using a large scoop, place 1 level scoop of batter into each ice cream cone.
- Place the cones upright in a muffin pan.
- Bake for 20–22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely.
Make the “Dirt”
- Finely crush the chocolate sandwich cookies in a food processor until they resemble dirt.
- Frost the tops of the cooled cupcakes with chocolate frosting.
- Dip the frosted tops into the cookie crumbs until fully coated.
Make the Carrot Garnish
- Cut a small slit into the wide end of each orange gum drop.
- Cut the green candy ropes into small pieces.
- Insert the green candy rope into the slit to create carrot stems.
- Place one carrot on top of each cupcake.
Create the “Terracotta” Finish (Optional)
For a more polished terracotta pot look:
- Allow the baked cupcake cones to cool completely.
- Microwave the orange candy melts in a microwave-safe bowl on HIGH for 1½ minutes, stirring every 30 seconds until mostly melted.
- Dip the outside of each cone (avoid dipping the cake portion) into the melted candy.
- Let the excess drip off.
- Place on a wax paper-lined baking sheet.
- Refrigerate until the coating sets.
- Once set, frost the tops and dip into cookie “dirt” as directed above.
