Double Duty Meatballs
Ingredients
- 1 jar (24 oz) spaghetti sauce, divided
- ⅓ cup onion, chopped
- 1½ lb lean (90%) ground beef
- ¾ cup quick or old-fashioned oats
- 1 egg
- 2 garlic cloves, pressed
- 1½ tsp Italian seasoning
- ½ tsp salt
Directions
- Preheat oven to 400°F. Spread ⅔ cup of the spaghetti sauce over the bottom of a rectangular baking dish.
- In a large mixing bowl, combine onion, ground beef, oats, ⅓ cup of the sauce, egg, garlic, Italian seasoning, and salt. Mix gently until just combined.
- Using a 1-tablespoon scoop, shape the mixture into meatballs and place them in the baking dish.
- Bake for 10 minutes. Remove from oven and pour remaining sauce over the meatballs.
- Return to oven and continue baking for 20 minutes, or until fully cooked.
- Use immediately or refrigerate/freeze in a container for later use.
