Double Duty Meatballs

Ingredients

  • 1 jar (24 oz) spaghetti sauce, divided
  • ⅓ cup onion, chopped
  • 1½ lb lean (90%) ground beef
  • ¾ cup quick or old-fashioned oats
  • 1 egg
  • 2 garlic cloves, pressed
  • 1½ tsp Italian seasoning
  • ½ tsp salt

Directions

  1. Preheat oven to 400°F. Spread ⅔ cup of the spaghetti sauce over the bottom of a rectangular baking dish.
  2. In a large mixing bowl, combine onion, ground beef, oats, ⅓ cup of the sauce, egg, garlic, Italian seasoning, and salt. Mix gently until just combined.
  3. Using a 1-tablespoon scoop, shape the mixture into meatballs and place them in the baking dish.
  4. Bake for 10 minutes. Remove from oven and pour remaining sauce over the meatballs.
  5. Return to oven and continue baking for 20 minutes, or until fully cooked.
  6. Use immediately or refrigerate/freeze in a container for later use.
