It’s 5:30 on a weeknight. You’re tired, the fridge feels like a puzzle you don’t have the energy to solve, and that takeout menu on the counter starts calling your name. I know that moment well, because I’ve been standing right there.
More than once I’ve had my phone in my hand, ready to order, and stopped to do the math: the cost, the wait, the delivery fee, and how heavy I’d feel an hour later. What I actually wanted was the flavor of that egg roll, not the rest of it.
That’s exactly why I made Egg Roll in a Bowl on last Thursday’s live show. It gives you everything you love about a takeout egg roll, the savory sausage, the tender cabbage, that sweet-and-spicy sauce, all in one pan, in about 20 minutes. No deep fryer. No delivery fee. And it has 4.8 stars from 33 reviews on the Pampered Chef site for a reason.
Here’s something I learned from years on a hospital floor and years in my own kitchen: when you’re tired, you don’t need a fancier dinner. You need an easier one.
Why This One Works on a Busy Night
- One pan. Everything cooks together, so cleanup is quick.
- Almost no knife work. Bagged coleslaw mix does most of the chopping for you, and the tools handle the rest.
- Real food, fast. Protein and veggies in the same bowl, on the table in about 20 minutes.
- Tomorrow’s lunch is handled. It reheats beautifully.
Egg Roll in a Bowl
Egg Roll
- 1 tbsp canola oil
- ½ onion
- 1 lb ground turkey sausage or pork sausage
- 1 red bell pepper
- 2 packages (14 oz each) coleslaw mix
- Optional: cooked white or brown rice
- Optional: chow mein noodles or sesame sticks, for topping
Sauce
- 2 green onions
- 3 tbsp reduced-sodium soy sauce
- 1 tbsp honey
- 1–2 tsp Sriracha or other hot sauce (start with 1 if your family likes it mild)
Directions
- Heat the oil in the Everyday Brilliance Pan over medium heat while you prep. Cut the onion into chunks and chop it in the Food Chopper. A few presses and it’s done: no tears, no cutting board.
- Add the onion and sausage to the pan. Cook 5–7 minutes, using the Mix ‘N Chop to break the sausage into small pieces as it browns.
- Core the bell pepper with the Pepper Corer, which pulls out the core and seeds in one move, then finely chop it in the Food Chopper. Add the pepper and coleslaw mix to the pan and stir well. It will look like way too much, but it cooks down. Cover and cook 5–6 minutes.
- While that cooks, make the sauce: finely chop the green onions, then stir in the soy sauce, honey, and Sriracha until combined.
- Pour the sauce into the pan and cook uncovered 1–2 minutes, until everything is combined and heated through.
- Spoon over rice, if you like, and top with chow mein noodles or sesame sticks.
Easy Swaps
- No bagged coleslaw? Use 1 small head of cabbage, thinly sliced, and 2 medium carrots, grated. Add 3–5 extra minutes of cook time in step 3.
- Lighter on carbs? Serve it over cauliflower rice instead of white rice.
- Pan on the smaller side? Add the coleslaw one bag at a time. It wilts down fast, and the second bag fits right in.
Nurse’s Note
Each serving (before rice and toppings) comes in at about 180 calories, 17 g protein, and 4 g fiber, which is a lot of satisfying dinner for the calories.
Sodium is about 810 mg per serving. The recipe already uses reduced-sodium soy sauce, so if you’re watching your salt, the easiest place to trim is the toppings. Go light on the chow mein noodles or sesame sticks and let the sauce do the talking.
The Tools That Make It Simple
I’ve tried a lot of kitchen gadgets over the years, and I only recommend the ones I actually reach for. These four turned this recipe into a two-tools-and-one-pan kind of night:
- Everyday Brilliance Pan: roomy enough for a whole pan of veggies, with a lid to steam them down fast.
- Food Chopper: onion, pepper, and green onion chopped in seconds.
- Mix ‘N Chop: breaks up ground meat evenly while it browns.
- Pepper Corer: core and seeds out in one twist.
